Banana Blueberry Pikelets

Banana & Blueberry Pikelet Ingredients

  • 1 cup wholemeal self-raising flour
  • ¼ tsp bicarbonate soda
  • ½ cup milk (depends on consistency)
  • 1 mashed banana
  • 1/2 cup frozen blueberries

Banana & Blueberry Pikelet Instructions

  1. Sift flour and bicarbonate soda into a bowl.
  2. Add milk and mix until the batter is smooth.
  3. Mix in mashed banana, adding more milk if needed to make the batter thinner.
  4. Carefully fold in blueberries.
  5. Heat a non-stick frying pan.
  6. Place a heaped tablespoon of mix in a frypan, and press down to spread out.
  7. Turnover when pikelet starts to bubble, press down another side, and cook until golden. Cool on rack. Serve warm or cold.

Tips

  • There is no need to spread with butter as they are pretty moist with the blueberries.
  • Increase the protein by adding 1 egg to the batter if egg yolk and white have been given over 3 days with no allergy concerns.
  • Freeze three in a snap lock bag for quick easy finger foods.
  • Great for taking out snacks.
  • Freezes well up to 3 months.

It makes about 24 small pikelets
